Gentlemen, Start Your Grills!

We kicked off the 2009 grilling season this evening with chicken topped with a spicy mango sauce, along with grilled zucchini, yellow squash, onions, sweet peppers, and cheese-topped corn casserole.



Definitely good eats!

And it was all prepared by you, but thanks for being modest. It was an excellent meal. Who needs restaurants when you can eat like that at home.Outside. Hahaha!

Yum! I am sorry you had to wait all the way 'til now to grill, though. I think Greg would go crazy if he could not grill year-round. Send us that corn casserole recipe. I like the looks of it!

Well, technically, we could have started grilling a week or two ago, but 70 degrees and sunny is ideal. I suppose we could grill all year round, but it's kind of a pain to have to trudge through three feet of snow and dig out the grill!

As for the corn casserole recipe, it's my aunt's. Here it is:

- 1 15 oz. can whole kernel corn, drained
- 1 15 oz. can cream corn
- 1 cup sour cream
- 1/2 cup melted butter
- 1 8 oz. package Jiffy corn muffin mix
- salt and pepper to taste
- 1 cup shredded cheddar cheese

Preheat oven to 350 degrees. Mix first 6 ingredients together. Pour into 8x8 greased casserole dish and bake for 45 to 50 minutes. Top with cheese the last 15 minutes of baking. (Hey, I never said it was healthy.)

Although I haven't tried it yet, I'm sure it would be good to mix in some red or chili peppers.

My secret is that I have no secrets. I cheat. I cheat a lot. For the "spicy mango sauce" I just used what I had left of some mango preserves and added a little Tiger Sauce.
